Mayo
Mayo, we learned how to make homemade mayo. I had no idea what what into making it. I have a lot more appreciation now.
Chicken Fabrication
Chicken butchery. We did this many times through out the class. This was my first in the class, I have done it in the past a couple times.
Dean's day
For class we went on the main campus and catered a free lunch for students to recruit them. The experience was nice to add to my repertoire.

Knife skills!!!!!
Day 1 in the kitchen of course you have to start with knife skills! left to right top to bottom we have some obliques, paysanne, batonnet, Julienne, rondelle, small dice, medium dice, bruniose, large dice, tourne. Not too shabby.
